Fresh Salmon Bake

 


So easy and so tasty. Perfect to impress dinner guests.

Ingredients

  • 2 salmon fillet
  • 1 1/2 cup rice cooked
  • 1 leek thinly sliced
  • 1 cup silverbeet torn
  • 1 tsp curry powder
  • 200 ml cream
  • 1 garlic clove crushed
  • 1/2 cup cheese grated

Method
  1. Saute leek in small frypan for 5 minutes over gentle heat, then add silverbeet and cook for a further 5 minutes or until just tender.
  2. Add rice, curry powder and salt and pepper. Mix to combine.
  3. Arrange in a casserole dish, place salmon on top.
  4. Mix cream with garlic, pour over salmon then sprinkle with cheese.
  5. Bake for approximately 30 minutes at 180C (fan-forced) or longer if well done is preferred.
EQUIPMENT
  • 1 casserole dish
NOTES
  • We prefer this just as it is, but it would be nice with garlic bread and salad. Spinach can substitute silverbeet leaves.
