Hainanese chicken rice express



This simple, healthy chicken and rice recipe is a family dinner staple. Using simple ingredients with fresh herbs and spices for a delicious dinner recipe.

Ingredients

  • 3 cups jasmine rice uncooked
  • 3 cups Massel* Chicken Style Liquid Stock
  • 2 chicken Maryland pieces skin off
  • 3 stalks fresh coriander
  • 3 stalks spring onion fresh
  • 5 cm fresh ginger peeled sliced
  • 5 garlic cloves crushed
  • 4 tbs sesame oil
  • 4 tbs light soy sauce
  • 1 pinch salt and pepper *to taste

Method
  1. Wash and rinse rice and add to the rice cooker pot.
  2. Pour in chicken stock or water.
  3. Marinate chicken with salt, pepper, half the sesame oil and half the soy sauce.
  4. Wash and rinse coriander and spring onion. Discard the root section and place all the stalks into the rice pot.
  5. Add ginger and garlic.
  6. Add in the marinated chicken and the marinade, and then the remaining sesame oil and soy sauce.
  7. Place the rice pot into the rice cooker and cook according to normal procedure.
  8. Vegetables can be discarded once cooked if desired.
NOTES
  • You can serve with crushed ginger, chopped chillies and soy sauce.
  • Your rice cooker may need more or less chicken stock.
