Kingston biscuits
Similar to the Arnott's Kingston biscuits...
Ingredients
- 200g butter
- 3 tbs honey
- 1 cup rolled oats
- 1 cup plain flour
- 3/4 cup coconut
- 3/4 cup raw sugar
- 1/4 cup cream
- 40g butter for filling
- 200g cooking chocolate
Method
- Melt together the butter and honey. Stir in oats, flour, coconut and raw sugar.
- Roll teaspoonfuls of mixture into balls and flatten with a fork on a lined baking tray.
- Bake at 180C for 10-15 minutes. Allow to cool.
- To make the filling, In a saucepan, bring cream to the boil and remove from heat immediately.
- Stir in butter and chocolate. Mix until smooth. Cool before using to allow mix to firm up.
- Sandwich biscuits together with the filling.
