Atlantic Salmon with a Coriander and Lime Dressing



Delicious salmon cutlets with a tasty dressing.

 Ingredients

  • 2 Atlantic salmon fillets
  • 1/2 cup dried breadcrumbs
  • 1/2 bunch fresh chives
  • 2 tbs olive oil
  • 1 bunch asparagus fresh halved horizontally
  • 1 red capsicum

DRESSING

  • 1/3 cup fish sauce
  • 1/2 bunch fresh coriander
  • 1 red chilli deseeded finely chopped small
  • 1/2 bunch chives finely chopped
  • 1 garlic clove crushed
  • 2 limes fresh
  • 1/3 cup brown sugar

Method
  1. Mix breadcrumbs with ½ bunch chives. Spread on a flat plate.
  2. Press salmon in crumbs and coat fish all over.
  3. Combine fish sauce, coriander root, chilli, chives, garlic, lime juice and sugar to taste.
  4. Blanch asparagus in salted water for 2 minutes refresh in cold water. Drain and set aside.
  5. In a large fry pan heat oil to high temperature. Do not allow to smoke.
  6. Add salmon and fry until brown. Turn and add asparagus and capsicum beside fish.
  7. Pour ½ dressing over the fish and vegetables. Turn off the heat and leave for 2 minutes.
  8. Serve on a large dinner plate with vegetables beside fish.
  9. Pour over remaining juice and garnish with coriander leaves.
NOTES
Chop the root end of the coriander and add to recipe. Use the leaves for garnish.
