Zucchini and Rice Tart

 



A healthy and economical light dinner.

Ingredients

  • 1 cup white rice cooked
  • 1 tbs olive oil
  • 2 zucchinis diced
  • 150 g fetta
  • 110 g semi-dried tomato chopped
  • 2 spring onions thinly sliced
  • 4 eggs lightly beaten
  • 1 pinch salt and pepper
Method
  1. Heat olive oil in a frying pan.
  2. Cook zucchini over high heat until golden.
  3. Place the cooked zucchini, rice, feta, tomatoes, spring onions and eggs into a large bowl.
  4. Mix well.
  5. Press the mixture into a greased 23 cm flan pan with a removable base.
  6. Put the pan on an oven tray and bake for at 200C for 25 minutes or until golden.
