Zucchini and Rice Tart
A healthy and economical light dinner.

Ingredients
- 1 cup white rice cooked
- 1 tbs olive oil
- 2 zucchinis diced
- 150 g fetta
- 110 g semi-dried tomato chopped
- 2 spring onions thinly sliced
- 4 eggs lightly beaten
- 1 pinch salt and pepper
Method
- Heat olive oil in a frying pan.
- Cook zucchini over high heat until golden.
- Place the cooked zucchini, rice, feta, tomatoes, spring onions and eggs into a large bowl.
- Mix well.
- Press the mixture into a greased 23 cm flan pan with a removable base.
- Put the pan on an oven tray and bake for at 200C for 25 minutes or until golden.
